Sweet (potato) morning

I woke up in the comfort of a misty San Francisco morning. The city outside my window was perfectly white washed and had ‘cozy Sunday’ written all over it.

First things first: I canceled all my prior plans, brewed some coffee, and headed up to the roof to take in the spit that the sky was so proudly offering. Back inside after a mist shower, my mind kept telling me laundry but my heart was eyeing the sweet potatoes that had been waiting for me all week long. 

I went for the food, per usual. I sliced up two sweet potatoes and half an onion, and fried them in a pan with coconut oil. I added generous pinches of sea salt and cayenne pepper, and mixed in fresh oregano leaves.

Once all the sweet potato slices looked fried and well, I threw them on a parchment paper covered baking sheet. I turned the broiler on high and popped the sweet potatoes in the oven for about twelve minutes while we whipped up some scrambled eggs and sautéed greens.

Sunday tastes so good. Take that, laundry.
